This is how we know it is spring

Pistachio Cake
it what you have in the spring and summer
many summers ago, maybe 30, we were invited to friends for dinner
she served this cake
Dane was worried, it wasn't chocolate
he had several pieces
and we have loved it ever since.

1 small pkg (4 serving size) of pistachio instant pudding
1 pkg white or yellow cake mike
4 eggs or 3
1 1/4 cups water
1/4 cup vegetable oil
6 drops green food coloring
Combine all and mix on medium speed for 2 minutes.
Pour into a greased and floured bunt pan.
Bake 350 45-50 minutes
cool at least 15 minutes
1 small pkg pistachio instant pudding
1 pkg dry cool whip
1 1/2 cups mile
few drops of green food coloring
Whip like crazy
frost and best served chilled

you too will know that spring is here when you eat this cake
